I hear that games can run in HD using Dolphin. Is this for Gamecube and Wii games? How do I make my games play in HD is there some kind of option? Cause I don't see it.
Yes, you simply increase the resolution in the gfx plugins.
1080 HDTV has a resolution of 1920x1080. Change it in the config menu, under the "Display" tab.
"HD" (high detail) is just a marketing term for 1280x720p and 1920x1080p resolutions on screens.
Just for clarification, I was reading a wikipedia page, and it mentioned that dolphin can go up to 720p for its definition. I have seen some dolphin youtube vids getting all excited about the 720p as well. Is this because dolphin can only display 720p and no higher even if you set the resolution to 1900x1080p (or, in my case, 1900x1200p)? Or can dolphin actually go to whatever you set the resolution to?

Dolphin can scale to whatever resolution your rig is capable of showing on screen.
I've succesfully ran dolphin at 2560x1600 res, and saw videos/screens of eyefinity setups where 1 ati card was used to run dolphin at 5760x1080 and higher resolutions.

I figure with a 5970 in crossfire you could run dolphin fine at 2160p using six displays (5760x2160)

Actually Dolphin Doesn't support CFX, so only 1 GPU in a 5970 is used, therefore actually making it slower in dolphin than a 5870. On top of that you couldn't do 6 displays because it wouldn't have enough GPU.
no, it's 100% possible to run dolphin using multidisplays. Here are some vids of twilight princess, sonic and melee running on 5x eyefinity setup (the card can do 6, but one is displayport so the guy isn't using it)

crossfirex is where you use more than 1 gpu.
eyefinity is where you use more than 1 display.

Yeah, you'd definitely have to use the 6 screens method in order to do 2160p because the 2160p televisions are tens of thouands of dollars (like 40k and above). But thanks for answering my question. That's amazing that dolphin has surpassed the capabilities of the wii itself. I'm excited to get an even higher resolution TV or LCD once I get the money. Smile
