You can play with your keyboard. :/
Click on GCPad n the menu. When that's done, set the device to DirectInput/0/Keyboard Mouse. Now click on a blank button and press a key to map it to that button.

You probably have to do this:
main Dolphin config, Gamecube tab, set "port 2" to Standard controller.
