iPhone doesn't support Dolphin at all, to effectively run Dolphin on it without having to rewrite it and be super super slow (iOS does not like JIT processing which is what Dolphin NEEDS) you would need to jailbreak the phone and because of that the devs said that it is not feasible to create a Dolphin version for iOS. So in theory it could work on a jailbroken iPhone but there is no iOS version of Dolphin in existence.

It runs, but when I tried it in Mario Kart Wii it didn't run even close to full speed and I lost 10% battery in one lap around Luigi Circuit. Sonic Riders was completely unplayable due to running at about half speed. I haven't bothered to test with more games because getting them on there takes too long and I don't like touch controls anyway.
