I just switched phones to an LG V20 and when I try to connect my wii remote to my phone, it asks for a pin number. I don't have a pin number, and I can't really find anything online that helps.

Wiimotes cannot sync with Android after KitKat IIRC.

If you want to use Wiimotes with Android, connecting a Dolphinbar over USB OTG is your only option.

Because Google broke functionality in the Bluetooth stack for it. It's been reported but they don't really care to fix a low priority issue like that. We can't fix that either.

No chance, just use another controller. I didn't even know that a Wii Remote could connect to an android device.

I've managed to connect my wiimote to my OnePlus 3 without the dolphin bar, and I am able to use it to browse my phone, but I am not able to use it in dolphin

Dolphin only supports wiimotes in the raw mode, which is disabled in Android for security reasons. USB raw mode is fine, but this needs the dolphin bar.
