I everybody, sorry for my bad english.
First to all, thanks for your work, i love it and i wanna say a huge THANKS.

I installed two version of dolphin, latest official (5) and Ishiruuka (i made all my attempts with both).
Game: Super Mario Galaxy 1
Hardware: bluetooth adapter, wiimote and nunchuk, wii sensor bar (powered on connected to my wii U, i start my console to activate sensor bar).

Using “real wii mote” configuration, starting Mario Galaxy, wiimote and nunchuk are ok but unable to point my wiimote (message “point wiimote to screen).

Maybe do i’m doing something wrong?

You should start the Wii Menu on the Wii U. A Wii U that isn't in Wii mode will turn off the sensor bar if no Wii Remotes are connected to it or if the currently running software doesn't use the sensor bar.

This is how I work with it as well, just keep in mind that your Wii U turns off automatically after a certain time (1 hour) so you need to start it again.
