The Wii Remote issues may just be related to it seeing the sensor bar and realigning with it at awkward times – I'm not entirely sure, MotionPlus and IR are always extra awkward with Dolphin from what I've heard. There's a few general solutions, including disabling the speaker on the remote (Wiimote > uncheck "Enable Speaker Data") and installing Toshiba's Bluetooth stack, the latter of which seems to solve *every* damn issue and thus has an official installation guide: https://dolphin-emu.org/docs/guides/wii-remote-plus-rvl-cnt-01-tr-connection-guide/

Note that "Vertex Streaming Hack" is an OpenGL-specific option – it makes it the fastest graphics backend, though, so no problem.
