Running modern PC games is not equivalent to running games in Dolphin (or any other emulator). Most PC games rely on the GPU for performance, so even if a PC had a mid-range CPU, it can still play with high settings if the GPU is good. With Dolphin, the GPU is responsible for things like the internal resolution, anti-aliasing, and anisotropic filtering. The rest of the performance is usually made up by the CPU. That your computer does great in modern PC games does not mean it will do fine in Dolphin simply because they stress hardware in different ways.
Also, it's far from simply being a matter of graphical quality, in regards to Metroid Trilogy or any other game. It's simply the complexity of translating GC and Wii code into something your computer can understand. Doing so takes a lot of resources, and will definitely place demands on your hardware. I would have a look at the code for any emulator; you'll find that the process of emulating a system takes a lot of work to get it running efficiently and properly, especially compared to the native system being emulated.
