Unpair/remove the Wiimote from your Bluetooth devices list then re-add it as you did previously. Prior to launching Dolphin, ensure the device is actually connected, then launch Dolphin and try to manually "refresh" to Sync the Wiimote, or tick "Continuous" scanning and it should pair as "1".
