I never pair up my Wiimotes via blueman, or anything else equivalent. I just hit the 1 & 2 buttons in Dolphin and let Dolphin handle it. I find it helps to have Continuous scanning enabled. What I do is I run bluetoothd as root before running Dolphin, make sure the Wiimotes are set to Real Wiimotes, then start the game and pair them up through Dolphin. Blueman recognizes them automatically if Dolphin takes care of handling them. You shouldn't need to futz around with ALT+F7, so I would just leave that alone for now.
