Hey guys. I have 2 old wii remotes which work fine with dolphin.

I picked up 2 genuine wii motion plus adapters on ebay so I can play Skyward Sword on my real Wii and Dolphin.

So my question is because I'm using the adapter and not the whole remote, does that mean I dont have to worry about the Toshiba Blue Tooth stack crap?

The Toshiba stack stuff's just for TR-model M+ wiimotes, so if you never had that issue before, you won't have it now. Technically, it's not even related to M+, as the TR model came out a couple of months after the first M+ built-in wiimotes. It just happens that the only way to guarantee you don't get a TR one is to get a golden M+ one (as they were limited edition and production stopped before TRs existed) or to get a non-M+ one.

A few other really really early motion plus bundles aren't -TR as well, like Flingsmash. But 99% of wiimote pluses are -TR wiimotes, since they've been the only ones sold for years now.
