I encountered this issue earlier today while feeling the urge to play through Star Fox Assault, after having beaten Star Fox Adventures yesterday... However, upon launching the game in Dolphin; I was only met with a black screen.

I was kinda stumped, I tried to fiffle with my local settings to get it solved. No such luck.

So I ended up googling this issue, and the most current search result was this reddit entry from 1 month ago: Star Fox Assault black screen

I'll share what I wrote in response to that entry down below now:

Okay, so I've been doing some troubleshooting for the last hour.

I've gone through the Dolphin-builds and isolated where the problem was introduced.
I can launch the Star Fox Assault [PAL] iso in Dolphin-build 5.0-5951 with perfect compatability.

Dolphin builds 5.0-5968*, and a couple of hundred after that one just crash immediately when trying to launch that iso.
On the current builds - 5.0-9589 as of writing - the game's window opens as a frozen black screen that has to be force quit. totally un-playable.

(I should probably write in a report on this "Star Fox Assault's PAL iso crashes on current dolphin builds" on some support forum, I guess.)

*The patch note for 5.0-5968 is; "Abstract Staging Textures - VideoCommon interface for texture readbacks/uploads" if that means anything...

I used the bisection tool and it seems 5.0-6566 broke it, with 5.0-6562 it plays perfectly fine. Are the Devs aware of this issue?

Apparently there is an issue with MMU, if you turn it off in the game properties you should be able to start it without any issue.
Check my profile for up to date specs.
