The ideal backend is the one for your hardware and game choice gives you the amount of performance and visual enhancement you want..... which can vary between games depending on your hardware. If hardware is not an issue then the ideal one is simply the one with out any graphical issues.... which again can vary depending on the game you are playing. The dolphin wiki does a reasonable job of documenting a lot of the issues specific games might have with different backends and is a great place to start.

If you're using Vulkan or OpenGL... If you are using Direct3D11 then they work as advertised.
