The Wii U Pro Controller and Wii Classic Controller/Classic Controller Pro work perfectly fine with Dolphin via WJoy, though the former's sticks are a bit annoying to set up (tl;dr, use this profile for the GCPad part and just change the device name to match your controller; feel free to adjust as necessary, and for Wii stuff you'll have to do it from scratch and pay attention to what I did with the sticks). For Wii games, I'd recommend having a real Wii Remote (preferably with MotionPlus built-in) and the requisite accessories – the newer -TR remotes work fine under OS X, though they're also non-trivial to set up.
Keep in mind that it's been a while since I've actually played anything in Dolphin with these (this MacBook Air is pretty much worthless for Dolphin), so there may be issues. I've heard a few reports ranging from "remotes working but MotionPlus dongle/built-in isn't detected" to "remotes don't work at all", but YMMV.
