Which controller does the job for both Wii and GC games on Mac Dolphin? Doesn't have to be fancy, just has to work.

There's absolutely no way that'll work as it's a WiiU accessory, not a PC-compatible one.
The best option for Wii games is to buy a pre-TR Wiimote Plus (such as the gold one from Zelda Skyward Sword) for Wii games, and a real GameCube pad and Ulao's BlissBox to connect it to your computer. This, however, could set you back a reasonably large lump of money. Another option is to buy something like the XBox 360 pad (wired version) as this is compatible with computers out of the box (although I'm not sure on what you'll need driver-wise to make it work on Mac) and has all the buttons and analogue inputs that a gamecube pad has. It'll be enough for a lot of wii games too, but a lot will be a massive pain in the backside, and some are impossible without a real wiimote.

The Wii U Pro Controller and Wii Classic Controller/Classic Controller Pro work perfectly fine with Dolphin via WJoy, though the former's sticks are a bit annoying to set up (tl;dr, use this profile for the GCPad part and just change the device name to match your controller; feel free to adjust as necessary, and for Wii stuff you'll have to do it from scratch and pay attention to what I did with the sticks). For Wii games, I'd recommend having a real Wii Remote (preferably with MotionPlus built-in) and the requisite accessories – the newer -TR remotes work fine under OS X, though they're also non-trivial to set up.
Keep in mind that it's been a while since I've actually played anything in Dolphin with these (this MacBook Air is pretty much worthless for Dolphin), so there may be issues. I've heard a few reports ranging from "remotes working but MotionPlus dongle/built-in isn't detected" to "remotes don't work at all", but YMMV.
