Why is 8x AA not available on capable hardware, like the K1 or X1? I get that it's not actually feasible to use it, just curious why the option wouldn't be in place anyways. I know the K1/X1 have hardware and driver support for it, as the Talos Principle can execute 8x MSAA and is completely functional. I'm not really asking for it to be added, just curious what the rational is behind a decision like that.

The functionality just needs to be exposed in the UI.

I was about to correct you saying the X1 actually lacks 16x support, because CSAA was removed from Maxwell 2, but you listed it as MSAA. That can't be real though. Otherwise why wouldn't dolphin on desktop be exposing the option? Or any other game? I think it's some kind of hack that gltools has.
