Conversely, does anyone know how to use the WIT tool to decompress a WIA file into a WBFS or other Dolphin-compatible file type? I could not deduce from the WIT FAQ pages or .txt files how to go about this.

Try this: wit convert -s input.wia --wbfs. Keep in mind this will delete the source file after the conversion is done. If that's not desired, use wit copy -s input.wia -d output.wbfs --wbfs instead.

The input of both commands can be any image format supported by WIT, not just WIA. You can also convert to other formats apart from WBFS by using one of these other parameters: --iso, --ciso, --wia or --gcz. The format the input will be converted by these parameters should be self explanatory.
