I know exactly why this is. Firefox (and firefox-based browsers) do not currently support DASH playback via HTML5, which also means you're not getting VP9 either since that's available only as a DASH format on YouTube.
This is supposed to be rectified in Firefox 31. Since that's also a new ESR version, that should mean that all Firefox-based browsers should get the functionality with their next full version number.
In the mean time, your browser may actually have partial support for this functionality, but is just disabled. You can re-enable said functionality via the following process:

If you look at "stats for nerds" you'll see that the "dropped frames" amount very quickly goes into the hundreds along with the stage FPS only showing around 30fps.
