Yes you can with glovepie. I can map Wiimote buttons and analogue inputs to keyboard and mouse functions. I also tried to map them to analogue inputs on an XBox pad, but that didn't go well. At that point I decided it was time for bed, so didn't try one of the included joysticks for analogue inputs, but that should work to allow better use of gyroscopes and the nunchuck stick.
