You have to be in a post 5.0 build. Scroll down on the download page.

I downloaded a development build (The latest one, just posted about an hour ago). I really hate to show my newness but how do I upgrade this? Can i drag and drop the entire dolphin directory that is the new build to replace my old one or is there some other method I need to use? Sorry again, and thanks

Just extract the new build somewhere on your computer (but don't overwrite the old build) and run it. Unless you've been using portable.txt, your settings will even carry across automatically.

NAND (stands for Not AND) is a type of flash based memory, and in this case it refers to the internal memory of the Wii. You should backup your NAND file in a safe place, but it doesn't matter what you do with the SD card since Dolphin doesn't (can't) read from it at all anyway.
