Stupid Question, but do you have a changelog?
So I can keep track on what exactly the updates provide
I've downloaded the latest release of x64 but I still don't see the Fast ESB option

reporting a bug that occurs with Metroid Prime 3: Corruption in the metroid prime trilogy when using dx9 with Store EFB copies to Texture Only disabled (necessary to fix visor bug), dolphin starts using a lot of ram and does not stop, eventually begins to stutter and fps decreasing exponentially, this does not occur with dx11 or if Store EFB copies to Texture Only is enabled, dx11 usually uses around 600mb of ram, because of this bug dx9 easily uses 2gb to 3gb and going.

Well, which settings are best depends on which game you wanna play. But in most cases, everything is set up perfectly automatically for you. The only things you could fiddle around with are internal resolution (and maybe Anti-Aliasing).
