Is there any way to make these show up in Dolphin? I'm currently glitch hunting and this would be very useful.

I don't think Dolphin would have any idea about those. Consider that something like a hitbox in most games would nothing more than variables representing different 2D or 3D points. That is to say, it'd likely just be a bunch of numbers floating around in RAM. To the emulator, it just looks like different values at different addresses; they don't mean anything until the game's code does something with them (e.g. stop the player when he/she hits a wall). There probably isn't a way to detect them unless you know exactly what the game expects and where to find those variables in memory.
