pressing a button bound to tilt Left or Right under "motion Simulation" in both the oldest and newest Beta versions of dolphin causes the cursor to leave the screen this bug was not present under version 5.0 of dolphin.

This is intentional behavior. Zelda: Skyward Sword relies on the pointer and the accelerometer being linked. (Note that you couldn't play Zelda: Skyward Sword with emulated controls in 5.0 stable.)

Is there or could you add an option to disable this as it brakes dead space extraction with emulated controls.
Until then i will play with 5.0.

What action is the game expecting you to do that you can't do? Tilting a physical Wii Remote does affect the cursor, so they can't have designed the game to rely on tilting and the cursor being completely independent..

Using tilt in Dead Space Extraction would make the cursor leave the screen but it seems to of stopped doing that and it has worked fine the last 3 times i have played it but if it breaks again i will update you.
