I tried my luck with one of those cheap controllers(Motion 2 in one for £10.95), and unfortunately my bluetooth dongle does not detect it. (4.0 , TS compatible, other devices work fine)

I'm going to buy an official controller soon, do I need to buy an official nunchuck as well, or should the one that came with the third party controller work fine?

In most cases, just an official wiimote will make most of 3rd party extensions work with Dolphin, but it's not always true...
