Because they're laughably easy, not very engaging, and ultimately aren't what makes zelda great. Not to mention environment puzzles are more interesting than combat mechanics because if you've already fought a particular enemy you already know what to do and it just ends up becoming repetitive and therefore boring.
Ask yourself this, what do you remember about Ocarina of Time? What parts of the game really stuck in your mind? I can guarantee you it wasn't any particular puzzle, unless you count the side quests. I remember exploring new worlds. I remember unique and interesting characters. I remember a story that I actually cared about. I remember mesmerizing environments. The puzzles are a cool aspect, especially the unique items and unique ways to use those items, but they aren't what makes zelda zelda. It greatly improves the game but it can't make up for the lack of the other more important elements.
