So, back to OC, won't the B75 mother board I've chosen allow me to OC the 3450 at all ?

Turbo Boost to 3.5GHz won't be enough for these games

NO
Chipset that support overclocking : P67 , Z68 , Z77 , Z79 (*)
You can still overclock i5 3450 @ 3.7GHz with Z77 mobo
B75 , H61 , H67 ....are hopeless
