Menus are on the top of the emulator. You'll find savestates in "Emulation" and hotkeys in "Options" (if your interface is in english

The menu bar's at the top of the screen. (In full screen mode, just bring your mouse to the top of the screen to show it.)
Look to Emulation > Save/Load State to just use the save states. Options > Hotkey Settings will show you the keyboard shortcuts for everything, including save states.

If you use default settings on F-keys on OSX they will be things like adjust brightness and sound etc.
You have to hold down the fn-key to get F1-F2-etc.. For some reason the save states and load states is inverse on OSX and win. I don't remember which is which. (shift f1 to save and f1 to load or the other way around..)
