Since the hotkeys have been re-done, I can't find where the snapshot hotkey has gone! It used to be F12, but that got changed to undo, so I pressed F11 instead, but that didn't do anything! I've now lost loads of snapshots I thought I took, thanks to the hotkeys getting re-done. :/

The hotkey changeover sometimes requires users to do a reset to get the default keybindings back. Go to Options > Hotkey Settings. Press "Default" and it will reset all of your hotkeys back to the original settings. You can also change the settings there if you want!

But there's literally no Snapshot keybind now.

There was never an option called "Snapshot". It has always been called "Take Screenshot". I even checked with an old version to make sure!

F12 has historically been bound to "Undo Load State".

I think you mean F9? And it still works.
