I'm playing Twilight Princess on the gamecube and the HUD looks a little stretched

Here are my graphics settings.

I want to know if my games should look like this at a resolution of 1920x1080.

You should leave the aspect ratio to "Auto" OR enable the widescreen hack.
The former option will not use the full 1920x1080 resolution, the latter one most likely will cause some sort of issues. You have been warned Wink

So I tried setting the aspect ratio to auto and it doesn't go fullscreen.

Wii games go full screen with auto

I guess it's something to do with gamecube games. I went back to force 16:9 and it looked twilight princess looked kind of stretched.

Yes. Force 16:9 will stretch 4:3 games such as twilight princess to 16:9. Auto will not stretch, it will leave it alone. Nearly all wii games support 16:9 so they don't need to be stretched on a 16:9 monitor (using the term stretch very loosely here, using it to refer to changing the aspect ratio during scaling).
