I finally found how to fix the ReBirth games not working: gaphics are messed up and the games crash if you've got EFB Copy set to "Copy to system RAM."
Posting this just incase somebody is searching for an answer, like I was recently.
So, if your Castlevania, Gradius or Contra ReBirth don't work, go to
Options->Graphics Settings->Advanced-> and set EFB Copy to "Copy EFB to GL texture (hack)"
