There's no point in doing anything with that PC, you should just build a new one.

I'm planning on saving the case and the optical drive and putting my fx build in it, it would save me around 50 bucks so..

AMD FX series ? Just to warn you even the fastest AMD FX 8350 OCed at maximum 5.0GHz is no match for an i3 4130 @ 3.4GHz . No point in buying G3258 if you're planning to downgrade to FX series

It's not just for gaming admin,

I'm in film school so that means I'll be doing rendering and editing as well, something that multiple worse cores will do better than fewer better cores

Then why not just wait for the new APU or "new FX" excavator (40% IPC increase over last gen FX 8350 , if amd is not lying , Dolphin will run well on their new CPU) . You have a laptop , right ? It's not like you don't have any PC atm
You're wasting money on new mobo and CPU (G3258) and you will not use them in the near future . Just tell me what's your point .
To tell the truth , i got Quad Core A10 6790k clocked at 5.0GHz which is faster than any FX CPU , APU in Dolphin of course and i'm regretting it . I'm too blind to believe in their quad core performance and it turns out to be the same as a dual core i5 mobile CPU . In Dolphin , it's even worse....I wished i could be more faithful in a Dual Core , it's just ... top of the line Z97 itx mobo is too expensive , top of the line AMD A88X ITX mobo is not . That's why i went with AMD build

as far as video editing goes, you should look into something with HT in your budget range, although all of those are rather expensive
Arch
Intel Core i7 - 4510U
iHD4400
8GB RAM

Isn't an i3 more than an fx 6300? Does Intel have any cheap cpus that support hyperthreading anyway?

Xeon E3 V3 Haswell Series if you're looking for heavily multi-threaded CPUs
They're as cheap as i5 but have the same power as i7 (4 cores 8 threads)
Why they're as cheap as i5 ? Well , Xeon series don't have integrated CPU and can not be overclocked . Basically i7 on steroids
You can find Xeon E3 1220V3 for $197 or an used Xeon E3 1226V3B for only $174 though this one requires H97 mobo
