Is it possible to use a Playstation move as a wii mote? I have a working PS move and PS eye for a PS3. The only posts about PS moves as wii motes are from 2018, so there's probably a solution now

You can! Since 2018 we've exposed raw sensor values in our GUI. So as long as you can get the raw accelerometer and gyro values from the Move controller (via DSU Client or any other means), you can make it work! Plus, you don't even need to worry about the lack of an IR pointer - Dolphin now has a virtual Wii Remote that it feeds the data into, so you can just give it the accelerometer and gyro values and the virtual wii remote will pick up the pointer values for you, all based on the other sensors! This will even work for Motion+ titles!

Unfortunately, I'm not aware of any DSU Server that works with PS Move controllers ¯\_(ツ)_/¯

Well, it doesn't necessarily need to use DSU. The reason DSU exists is to get the raw sensor data out of the dual shock 4 on windows. If there is an alternative way to get that data from the Move, it'll work.
