Galaxy S6,  huh that's rather odd.  I don't think I've seen that error on here?  I noticed you are still on 5.0.2.  Could you try updating to 5.1 (not 6.0 as the GPU drivers have issues on that build)

Did you select your CPU Core in the settings? "Unrecognizable cpu_core: 3" is the first sign that no cpu core was enabled.

Did you have the play store version installed? If so, uninstall it.

I'm too lazy too look up the value 3, but this option is to select between interpreter, cached interpreter, x64 jit, x64 jitil. arm32 jit (deleted), arm64 jit. So maybe there is just a bad value within the ini. Try to switch between two of them, and a good value will be written.

I've tried all 3 options I have:

Interpreter
Cached interpreter
JIT ARM64 Recompiler

they all fail in the same way

"Panic Alert: Unrecognizable cpu_core: 3"

That means that your config isn't being saved properly. Go to your settings > Apps > Kill the dolphin app process

Go into a file manager, find the Dolphin Emulator folder. Delete the config files (Or the entire folder if you don't care about saves)

I have seen issues of Dolphin not flushing config changes properly on Android before or it delays it way longer than it should.

Try going to dolphin.ini, scroll down to where you see CPUCore. Then try each number going up from 1 to 5 and see if it works then. Sorry I should've said this first.
