(I am using the official Wii Remote and Nunchuck, that came with my Wii.)
Basically, when in game(in this case Super Mario Galaxy), Mario will always move forward or to the right depending on which way i point the stick, even if it is centered at all times from being plugged in to the Wii remote until i get in-game.

Any ideas why?

Because nintendo controllers are silly and always have been. Unplug the nunchuck, and then plug it in again, taking care to not press it at the same time as you do.

I have already tried that, several times.
