I've experience that thing when i disable all cores of my i7 (only one running). The crash appear when the cpu is overloaded. When i've enable again all cores it doesn't crash. So i think, it's because new rev of dolphin use much more cpu, try to disable everything like your antivirus (if you are playing offline of course), and try without wiimote to test what i'm saying! Try also to disable audio throttle and some options in dolphin.
