I am trying to use my keyboard + mouse to emulate a Wii remote, but I don't know the best way to arrange the controls so that I can play, can someone help?

For the two Super Mario Galaxy games, you could go with something like this:

Map the Nunchuk stick to WASD and the Wii Remote IR to the mouse cursor. You have some more freedom with the buttons of the Wii Remote and Nunchuk, but you could try for example mapping the Wii Remote's A and B buttons to the two mouse buttons, mapping the Nunchuk's Z button to something you can press while having your hand on WASD (left Shift, maybe?), mapping the Wii Remote's d-pad to the arrow keys, and mapping the Nunchuk's C button to... Hmm, I'm not sure, so just try something out. Maybe something that's close to WASD.

You will need to use different controls for the manta ray surfing levels and ball rolling levels, but I don't remember exactly which of the motion inputs are needed for them.
