If you want it to be faster while still working correctly, there are only two options: Wait for the bug to get fixed, or go back to an older version of Dolphin that doesn't have the bug.

Operating System: macOS Sierra
Processor/CPU: 2.5 GHz Intel Core i7
Video Card/GPU: Intel Iris Plus Graphics 640 1536 MB
Memory/RAM: 16 GB 2133 MHz LPDDR3
Dolphin Revision Currently Using: 5.0-8081

My workaround is to uncheck "Scaled EFB Copy".  Everything works fine but some textures quality are lower.  I hope this help.



OpenGL Graphics Configuration -> Enhancements -> [Uncheck] Scaled EFB Copy

I’m using dolphin-master-5.0-10194 on macOS Mojave.
