Dolphin supports multiplayer, just connect a further controller. (just make sure, you have set "Standard Controller" for each Port under Config -> GameCube)

What are your setting? Click the Config button and look at the Gamecube tab. Click on the GCPad button and look at the first two tabs. Take screenshots of all of them and post them here so we can see what's going on.

Phone photos? Nooooooo! The quality probably won't be good enough to read. Why people don't just google "how to take screenshots Windows 7" is beyond me. Kids these days have no initiative :p

Hold the Alt key and press the Print Screen key (usually in the upper-right hand of your keyboard) open up MS Paint, Paste and Save As. Upload it to a site like imgur, then post the link here.

22 years old is at the upper end for being a "college kid" :p

I'm not familiar at all with njoy, but doesn't it turn your phone (or whatever is running Android) into a game controller via WiFi? For the second player's controls under GCPad, see if there's another entry under Input Device aside from Keyboard and Mouse. If so, see if it's your njoy controller and switch to it, the configure the controls.

How does njoy even work? Does pressing a button on your phone with njoy "simulate" a keystroke on your computer? Something you should try: in GCPad for Player 2, click on one of the controller buttons you want to configure, the press a button on your phone with njoy. If Dolphin responds and maps something from njoy, all you have to do is configure Player 2 by clicking a button (A, B, X, Y, Main Stick, C Stick, etc) and press the njoy button you want that mapped to. Afterwards, click the Config button and go to the Gamecube tab; make sure both Port 1 and 2 are set to Standard Controller.
