To preface this: I did not change anything in my NVIDIA control panel or graphics settings in Dolphin and it gives me this error: https://imgur.com/PWKWhNe , and leaves my iso (Mario Kart Wii in this case, but it does this with all roms) extremely distorted, does anyone know how I would fix this? I reinstalled Dolphin and it didn't seem to help.

Please show us your nvidia settings, both global and (if applicable) specific to dolphin.

Turns out I had an outdated graphics driver, thanks for the help though.
