I tried both OpenGL and Vulkan, with every settings for shader compilation, and I deactivated the panic handlers as well but I get the same results. The internal resolution it's always at x1.
As for specs, i have a Oneplus 8T, with 8gb of ram, a snapdragon 865 and an adreno 650

Any help? I see a lot of people playing it no problem, so I'm confused on why I have that ugly freezing issue
Yesterday I tested it on Dolphin beta and the game runs quite well: between 27-31 fps stable and no freezes. The power of your phone is almost identical to mine so it should work the same for you as it does for me.
Leave the options as they are by default when installing Dolphin beta and change the following:
Config-Advanced:
Override Emulated CPU Clock Speed (Enabled)
Emulated CPU Clock Speed (Leave it in 70%)
Graphics Settings:
Video Backend (OpenGL or Vulkan) Choose the one that works best for you in other Dolphin games.
Shader Compilation Mode (Hybrid Ubershaders)
Compile Shaders Before Starting (Enabled)
Enhancements:
Internal Resolution (You can leave it at 2xNative 720p you will not notice a performance improvement by leaving it at 1xNative)
Full_scene Anti-aliasing (Off)
Anisotropic Filtering (This option does not affect game performance, you can leave it at 1x or 16x)
Scaled EFB Copy (Enabled)
Per-Pixel Lighting (Enabled)
Disable Copy Filter (Enabled)
Hacks:
Skip EFB Access from CPU (Disabled)
Defer EFB Copies to RAM (Enabled)
GPU Texture Decoding (Enabled)
Save Texture Cache to State (Enabled)
Advanced:
Enable Progresive Scan (Enabled)
Backend Multithreading (Enable this option if you use Vulkan)
