Did you try 3.0?

Why OpenGL? I'm playing this game right now, 11+ hours and no freezes or crashes.
Direct3D9, EFB to RAM and DSP LLE using the official Dolphin 3.0 release.

Just by switching to another video backend? Or has this happened because you tried to use DSP LLE emulation without having the required DSP dumps in Sys/GC first?
If it was the former, try deleting the shader cache files, just in case they were broken somehow...
My computer specs:
OS: Windows 7 Ultimate x86
CPU: Intel Core 2 Duo E6750 @2.66Ghz - 2GB of DDR2 RAM (400Mhz)
GPU: NVIDIA GeForce 8800 GTS 512
