The thing is, that isn't the best desktop processor. If we were willing to spend large amounts of money on a desktop, we'd get a better processor than you can in a laptop.

a) The 590 is not equivalent to two 580s in SLI as the two cores are underclocked to function without overheating on a single card.
b) You're comparing hardware from two generations.
c) Non-M 7970s in crossfire will beat 7970Ms in crossfire. Also I haven't seen many Quad crossfire/SLI capable laptops with 4 7970s or 4 680s. In fact I haven't even seen any with Tri Crossfire/SLI of even the M variants.
Finally, I've thought of another general desktop argument (if money isn't something we care about):
Not seen many LN2 cooling systems for laptops, have we.
