I think I already have them all so challenge accepted
But I'm not sure because I have been farming most enemies until they dropped two items. The Giant Skeleton had three actually, a Turquoise but it got replaced with the Ring of Varda later after you beaten the game.

Easy enemies to miss are usually Dodo Bird in the inverted entrance, the skull of Yorick (not the body obviously) at the inverted castle keep and the Mudman in the boss fight with Lesser Demon in Long Library although he doesn't drop anything.
