Hey

I was wondering if we could connect the joycons to dolphin, so we could play with them as a wii remote to Zelda Skyward sword ?

Not at this point, unfortunately. I started poking around this when I got my Switch, but gotten numerous headaches from that part of the code base, so I didn't get too far with it.

You can connect them as normal controllers and map them as you would map any other controller, but they will not act as Wiimote Plus replacement.
There is a pull request for WM+ emulation though, which might be interresting to some degree
