GDDR5 doesn't necessarily matter, at least not directly. But video memory bandwidth does matter and GDDR5 does affect that.
Video memory bandwidth = memory transfer rate (also called effective frequency or effective clock rate) x total memory bus bitwidth / 8 (assuming you want it in B/s)
Because GDDR5 is quad pumped instead of double pumped it typically has a higher transfer rate which helps improve video memory bandwidth.
It can make a huge difference or none at all depending on the exact hardware frequencies being compared and the software being used.
