More importantly, TAS by its very nature relies on things that a real console can't do, so I don't see why having accurate loading times would matter.

TAS relies on things a human player can't do, but not things the original hardware can't do. Metroid Prime TASers have been wanting improvements for Dolphin's loading time accuracy for quite a while, both so that routes in rooms aren't changed from what they are on console for arbitrary reasons and so that realistic time comparisons can be made between consoles and emulators. While the exact length of loading times might not be as important for some other games, I think most TASers agree that things like these should be emulated accurately if possible.
