Set the texture cache to Fast. Update to the latest development version of Dolphin, then enable the Hyrule Field Speed Hack in the game properties. If it still runs too slow after that, try turning off per-pixel lighting or turning down internal resolution, anti-aliasing, or anisotropic filtering.
