Well, you're definitely running it the way you should to get the Nvidia graphics to kick in......
I forgot to say this earlier, but make sure you aren't touching the drop down window under graphics in Dolphin. That can mess with your settings. Leave it at default.
You may need to kick it into high gear. Try this to see if it turns it on: increase the Anti-aliasing to 16, resolution to 3, and 4x MSSAA.
