So I just got my bluetooth dongle, and I have my wiimote. I'm ready to hook it up to my computer and play some wii.

Google search shows a few guides, but I'm wondering if any program in particular is recommended for any reason (or if a program is needed at all). Or if I can just follow any of the guides..

Guide I'm considering

If you're running windows 7 then you don't even need bluesoleil, as 7 has a MS bluetooth stack inbuilt into the os. If you're running xp, vista or any other os then you will need bluesoleil, so use that guide you posted. Here's a video of how to connect a wiimote to dolphin in windows 7 - http://www.youtube.com/watch?v=gLvaUKGhxLE.
