How much video editing? If you do it for like a profession and need it done FAST, then hyperthreading is for you. If you're just a casual user, then it's rather unnecessary.
What does professional mean? I do much video editing and rendering 3d models, sometimes i also create Video game reviews and lets plays, my current pc was often to weak. Its never really commerical but tempus pecunia est.
I want to replay Zelda:SS and SMG in HD especially, Zelda TP seems to work properly at 1080p (ref: this lets play). As I said I think its a thoughtful decision to take a i7 and ddr4. It seems that i systematically refuse your suggestions, i know. But downgrading my new system to an i5... i don't know, i would like to have DDR4 just to have a system which is not completly obsolete in four years.
