Like, if I wanted to get character animations against a solid background, I've seen this done in videos but not sure if I've seen it done in Dolphin. The game I have in mind is Paper Mario: The Thousand Year Door btw, I'd like to toggle visibility of the environment so I can get better unobstructed views of character animations. Is there a setting that can do this?

You could record a fifolog. Fifologs allow you to record a period of frames and then play that period back in Dolphin without the game running, and you can do things like control the range of objects that are drawn and test on different platforms and raise resolution for screenshots and all kinds of useful things!

In your case, record the fifolog, and when playing it back, play with the objects range. See if you can isolate where the character sprites are in the range and cut out everything else. It might work!
